Why do some microwaves not have a turntable?

Turntables help to ensure food is cooked consistently throughout. However, in commercial microwaves, it's important to provide as much capacity as possible. So, rather than using a turntable which can be quite bulky, commercial microwaves usually have a 'stirrer', installed next to the magneton. This ensures the microwave energy is evenly distributed through the whole cavity.
