What is a Rockwell Harness Rating?

This is a unit of measurement for calculating the strength of a variety of materials. Giving you a fantastic understanding of how strong an item is. Focusing on something called ‘indentation hardness’, allowing you to compare knives.

For example a knife with a rating of 60° suggests it is made from a stronger and harder stainless steel than a knife with a 52° rating.

However, it does not always mean this is the best choice for you. If the knife is going to encounter rougher treatment such as being stored incorrect or used on surfaces such as stainless-steel worktops a lower rating maybe more suitable as it is less likely to chip or become damaged but will lose its edge slightly quicker than those with a higher rating.
